1cupSelf-Raising Flour
1.25cupCarrot, grated
1.25cupZucchini, grated
0.66cupFrozen Corn
0.33cupShallots
1.33cupShredded Low Fat Cheese
0.5cupLow Fat Milk
3eachEggs
60gReduced Fat Spread (Margarine), melted

Method

  1. Preheat oven to 180 degrees C, and line muffin tray with muffin liners.
  2. In a large mixing bowl, add flour, vegetables and cheese. Mix well.
  3. In a jug, whisk milk, eggs, and spread (margarine). Pour into flour and vegetable mixture and mix well until just incorporated.
  4. Spoon mixture into muffin tin and bake for 25-30 minutes until golden brown.
