1tbspextra virgin olive oil
1large onion, diced
500glean beef mince
1cupmixed cubed vegetables, frozen (carrot, peas, corn)
1/2head cabbage, shredded
1tbspcurry powder, salt reduced
2tbsplong grain rice
3/4cupchicken stock, salt reduced


  1. Heat a pan on medium heat and add oil once hot.
  2. Fry onion until softened, about 5 minutes.
  3. Add in mince and cook for a further 2-3 minutes.
  4. Stir in frozen vegetables, cabbage, curry powder, rice and chicken stock.
  5. Simmer on medium to low heat for 10 minutes or until rice and cabbage are cooked through.
  6. Serve on wholegrain bread, warm wholegrain rolls, or pasta.

Recipe description

This recipe was created in collaboration with the Queensland Country Women’s Association’s (QCWA) Country Kitchens program. This savoury mince is a twist on an old classic. It also has plenty of flavour without added salt. A favourite with the kids!


It can be made with fresh, frozen or tinned vegetables; whatever you have on hand.
