6Mission Wholewheat Mini Wraps
3Eggs
1cupLow fat Greek yoghurt
1tbspBasil pesto
1Red onion, chopped
0.5Capsicum, chopped
0.5cupPeas or spinach
0.25cupFrozen beans
12Cherry tomatoes
2cupLow fat cheese
Method
- Cut wraps in half and fold into sprayed muffin tin
- Mix together eggs, yoghurt, pesto and vegetables
- Distribute egg mixture between muffin cups and top each cup with a tomato and sprinkle of cheese
- Bake for 20 minutes at 180 C
