Ingredients

6eachMission Wholewheat Mini Wrap
3eachEggs
1cupLow fat Greek yoghurt
1tbspBasil pesto
1eachRed onion, chopped
0.5eachCapsicum, chopped
0.5cupPeas or spinach
0.25cupFrozen beans
12eachCherry tomatoes
2cupLow fat cheese

Method

  1. Cut wraps in half and fold into sprayed muffin tin
  2. Mix together eggs, yoghurt, pesto and vegetables
  3. Distribute egg mixture between muffin cups and top each cup with a tomato and sprinkle of cheese
  4. Bake for 20 minutes at 180 C

Can be made into Mexican quiche by adding salsa and beans, Morrocan quiche by adding cumin or Breakfast quiche by adding ham and cheese
