Sweet Potato Spinach Pizza

Ingredients
2tspOlive oil
250gSweet potato, peeled and chopped into bite size
1Onion, finely diced
250gSpinach, frozen
150gRicotta cheese
0.25tspNutmeg
0.25cupFeta cheese, reduced fat
1Pizza base
0.5cupBasic pizza sauce recipe
0.5cupGrated cheese, reduced fat
KgToasted pine nuts (optional)
Method
- Preheat oven to 180C.
- Toss sweet potato in half the olive oil and roast in the oven on a shallow baking tray until soft, about 20 minutes.
- In a large fry pan saute onion in olive oil until softened and then remove from heat. Toss through thawed spinach, ricotta, nutmeg and feta cheese.
- To prepare your pizza, layer a thin coating of pizza sauce and then grated cheese. Top with the spinach mixture and then finally the roasted sweet potato.
- Bake in the oven for about 25 minutes until golden. Top with toasted pine nuts for an extra gourmet touch.

Variations
See the basic pizza sauce recipe. This pizza is equally delicious without the tomato sauce or using pesto as an alternative. Slightly tender roasted vegetables can be stored in the refrigerator until needed and can be used in multiple recipes like roast vegetable wraps, lasagnes or sweet potato and cous cous salad.
