Ingredients

500gPremium beef mince
1unitMedium onion, finely chopped
4eachCrushed tomatoes, 420g tin
1unitCorn, 420g tin
.5tspGround paprika
1tspOregano
1tspMexican chilli powder, medium
.5tspSugar
.5tspSalt
.5tspPepper
2tspGarlic powder or crushed cloves
3tspGround cumin
2unitTaco boats
.5cupLettuce
1unitCherry Tomatoes
1tbspGrated Cheese
2tspSour Cream

Method

  1. Brown mince and onions.
  2. Add all dry ingredients and stir.
  3. Add tomatoes and corn and simmer until thickened, stirring occasionally.
  4. Taste test as sometimes due to the acidity of the tomatoes flavours may need to be adjusted a little.

Variations

Can be served in either a taco boat or on a bed of toasted tortilla chips. Serving Size: 1/3 cup taco meat, 1/2 cup lettuce, 1 cherry tomato, chopped into 4, 1 tbs grated cheese, 2 tsp sour cream, 2 taco boat or 6 tortilla chips. Enjoy
