200gVermicelli noodles
1tbspSesame oil
1unitRed capsicum, cut into thin strips
1unitCarrot, cut into thin strips
1unitRed onion, finely sliced
100gSnow peas, cut into thin strips
0.25cupFresh mint, chopped
0.5cupFresh coriander, chopped
1unitGarlic, clove
1unitFresh coriander, bunch
2unitBirdseye chilli
2unitLemon rind and juice of whole lemon
0.33cupThai fish sauce
0.33cupSugar, castor
0.33cupCoconut vinegar (available in Asian stores)

Method

  1. For the dressing, process garlic, coriander bunch and chilli in a food processor or very finely chop. Add remaining dressing ingredients (lemon, fish sauce, sugar and vinegar).
  2. Cook noodles, drain and cool under running water following packet instructions.
  3. Drain well and toss with oil followed by all the remaining ingredients and dressing. Serve.
