The Fabulous Foccacia

1eachSweet Potato, sliced
- Preheat oven to 180 degrees C.
- Mash avocado and feta together in a bowl. Cut foccacia/soft bread roll in half and spread avocado mixture.
- Roast beetroot and sweet potato slices with olive oil (approx 5 minutes). Once cooked, mix beetroot with balsamic glaze. Leave vegetables to cool.
- Add beetroot, sweet potato and rocket to bun, and top with a drizzle of balsamic glaze.

To make this recipe vegan friendly, remove feta (i.e. plain avocado mixture)
