Ingredients

500gwholemeal spiral or penne pasta
500gfrozen vegetable mix (peas, carrot and corn)
2 x 425gtins of tuna in springwater, drained
250gblock of light cream cheese (softened)
1cupreduced-fat grated cheese

Method

  1. Preheat oven to 180 degrees.
  2. Cook 500 grams of wholemeal spiral pasta, for 2 minutes less than the packet instructions.
  3. Once cooked, drain the pasta and transfer to a large bowl. Add 500g of frozen mixed vegetables and 2 drained cans of tuna. Stir through.
  4. Stir through the softened light cream cheese until it's melted through the pasta, vegetables and tuna.
  5. Transfer to a deep, greased baking dish and sprinkle with grated cheese.
  6. Bake in the oven for 15-20 mins or until golden on top.

Variations

To serve this as an affordable option in the tuckshop, we recommend doubling the recipe to decrease the cost of labour and allow for a higher mark-up.
