Vegetarian Pizza Scrolls

Ingredients

2cupsSR flour
1 ¼cupslow fat Greek yoghurt
12tablespoonssalt reduced tomato paste
½cupreduced fat cheese (grated)
3cupschopped, mixed vegetables (e.g. capsicum, mushroom, spinach, sun-dried tomato)

Method

  1. Preheat oven to 180 degrees C and line a baking tray with baking paper.
  2. Mix flour and yoghurt to form a smooth ball and knead for 5 minutes.
  3. Roll out dough on lightly floured surface to a 30cm x 25cm rectangle.
  4. Spread tomato paste on dough and top with vegetables and ½ the grated cheese.
  5. Roll up from long side and cut into 3cm thick slices.
  6. Place cut side up onto tray.
  7. Top with remainder of cheese.
  8. Bake for 20 minutes until golden.

This recipe is a variation of the ‘Freshly Baked Scroll’ recipe submitted by Bernadette Sargent of Tallebudgera State School.

Variations

  • Roast vegetables (zucchini, pumpkin and sweet potato) could also be used as scroll fillers.
  • Consider using basil or green pesto instead of tomato paste for a change in flavour.
  • You can bake fresh or freeze and heat on demand.
  • Serve with veggie sticks, dip or cheese to make a complete meal.
