Vegetarian Pizza Scrolls

Ingredients
2cupsSR flour
1 ¼cupslow fat Greek yoghurt
12tablespoonssalt reduced tomato paste
½cupreduced fat cheese (grated)
3cupschopped, mixed vegetables (e.g. capsicum, mushroom, spinach, sun-dried tomato)
Method
- Preheat oven to 180 degrees C and line a baking tray with baking paper.
- Mix flour and yoghurt to form a smooth ball and knead for 5 minutes.
- Roll out dough on lightly floured surface to a 30cm x 25cm rectangle.
- Spread tomato paste on dough and top with vegetables and ½ the grated cheese.
- Roll up from long side and cut into 3cm thick slices.
- Place cut side up onto tray.
- Top with remainder of cheese.
- Bake for 20 minutes until golden.
Recipe description
This recipe is a variation of the ‘Freshly Baked Scroll’ recipe submitted by Bernadette Sargent of Tallebudgera State School.
Variations
- Roast vegetables (zucchini, pumpkin and sweet potato) could also be used as scroll fillers.
- Consider using basil or green pesto instead of tomato paste for a change in flavour.
- You can bake fresh or freeze and heat on demand.
- Serve with veggie sticks, dip or cheese to make a complete meal.
