Beef Burger Pockets

Ingredients

2cupscarrot, grated
1cupbreadcrumbs
2kglean beef mince
1tinlentils
1cuptomato salsa
2eggs
2tbspmixed herbs
25white or wholegrain wraps
25reduced-fat cheese slices

Method

  1. Combine meatball ingredients and mix well. Shape into burger patties using hands or burger press. ½ cup mixture = 1 pattie.
  2. Freeze burgers in layers so they easy to retrieve as needed.
  3. Cook at 180 degrees for 7-8 mins or until cooked through.
  4. Warm wrap in microwave for 20 seconds.
  5. Add beef patty and slice of cheese to centre of wrap and fold in the edges. Keep in the food warmer until service or pop into oven to melt cheese before service.

The lentils add bulk and fibre to this recipe, and no one will even know!

Variations

  • Zucchini and mushroom could also be ‘hidden’ in this recipe to add to the veg count while adding bulk.
  • Use GF wraps to make this a gluten-free meal.
  • Omit cheese to make dairy-free.
