Carrot, Orange and Pineapple Ice Blocks

Ingredients

45large juicing carrots (washed and ends removed)
5 - 18oranges (skin removed) OR 2.3L fresh unsweetened orange juice
500gramsfrozen pineapple

Method

  1. Juice carrots into measuring jug until you have 2.3L carrot juice.
  2. Juice oranges, or pour bought juice, into a measuring jug until you have 2.3L orange juice.
  3. Transfer orange juice to large jug with carrot juice.
  4. Puree frozen pineapple, add to carrot and orange juices.
  5. Stir well to combine and pour into ice block moulds (aim for 75mL portions).
  6. Place lid on the moulds and insert sticks, then freeze (~ 6 hrs).
  7. Serve frozen.

Recipe description

If you don’t have ice block moulds, use disposable cups and sticks.

Variations

Try adding additional fruit to this recipe to create your own flavours:
  • Try frozen mango or lychee to create a more tropical flavour. Puree fruit, add to other juiced / pureed ingredients and stir well to combine.
  • Add a selection of frozen berries to change the colour. Puree fruit, add to other juiced / pureed ingredients and stir well to combine.
  • You can make a smaller batch if this suits your tuckshop. Make sure the carrot juice equals the orange juice.
