Green Veggie Wraps

8Spinach and Herb Wraps (Mission or Helga's)
1cuphummus
4cupsshredded lettuce or spinach leaves
1avocado, thinly sliced
1cupgrated carrot
1yellow capsicum, thinly sliced
1/2cupcorn kernels
1/2continental cucumber, thinly sliced
1cupreduced-fat grated cheese
Method
- Place wraps on sandwich paper and spread 1 tablespoon of hummus evenly across each wrap.
- Load with chosen vegetables, including lettuce or spinach, cucumber, yellow capsicum, avocado (if using), 2 tablespoons of grated carrot and 1 tablespoon of corn.
- Add 1 tablespoon of grated cheese, and 50g protein of choice (i.e. chicken, turkey or ham) if using.
Recipe description
Serve wraps on your menu? Switch up your choice of wrap supplier for the day to a green option and fill them with lots of yummy gold and green ingredients, like capsicum, cheese and corn, as well as spinach, lettuce and cucumber.
Variations
If adding protein, use fresh chicken breast or tenderloins, sliced turkey or salt-reduced ham.
