Mini English Muffin Pizzas

4wholeEnglish muffins, wholemeal
8tablespoonstomato passata
sprinkledried herbs
1wholered capsicum, deseeded and diced
1cupspinach leaves
1cupcanned pineapple pieces, drained
1cupcheddar cheese, reduced fat, grated

Method

  1. Preheat oven to 180°C.
  2. Slice English muffins in half.
  3. Spoon the tomato passata over each muffin half and sprinkle with herbs.
  4. Layer the capsicum and spinach onto each muffin and add the pineapple.
  5. Sprinkle each muffin with grated cheese.
  6. Grill for 5 minutes until lightly golden.

Variations

  • Pending toppings, these great pizzas are rated GREEN or AMBER per Smart Choices.
  • Consider making in bulk and freezing, reheating on demand.
  • A variety of bases can be used including pitas or DIY dough!
  • To make this GF, ensure you use GF pita, muffin or base.
  • Ensure you consider different portion sizes relevant to your student cohort (ie, High schoolers may need 2 muffin pizzas per serve whereas infants will only need one).
