Ingredients

1cupself-raising flour, wholemeal
¼cupcustard powder
½ cupcaster sugar
1cupreduced fat vanilla yoghurt
2tblspvegetable oil
2wholeeggs, lightly beaten
200gramsreduced fat cream cheese
fruit of choice, see note below

Method

  1. Turn the oven to 180°C to preheat.
  2. Sift the flour and custard powder into a large bowl, mix in sugar.
  3. In another bowl, whisk yoghurt, oil, eggs and essence together
  4. Carefully combine wet and dry ingredients. Do not over mix.
  5. Spread the mixture over the base of a baking paper lined 28cm x 18 cm slice pan.
  6. Scatter over fruit of choice and dot with 1 – 2 cm chunks of cream cheese.
  7. Bake at 180°C for 35 minutes or until golden and cooked through.
  8. Cool before cutting into 16 squares.

Variations

Pick one or a 2 of the below to customise your slice:
  • 400g can of fruit natural juice, drained and cut into 2cm pieces (eg, peaches, apples, cherries or apricots)
  • 1 ½ cups of frozen fruit (eg blueberries, strawberries, mango or pineapple)
  • 1 ½ cups of fresh fruit (if you have excess).
