Ingredients
32slices ofwholemeal bread
1tbspvegetable oil
1smallonion, diced
1tbspminced garlic
500gminced beef
3tbspplain wholemeal flour
1tbspworcestershire sauce
1 tspbeef stock powder (reduced salt)
2tbsptomato paste (no added salt)
1tbspsoy sauce (reduced salt)
1/2 cancarrots, rinsed and drained
1/2canpeas, rinsed and drained
70glight tasty cheese (grated)
2cupscauliflower rice (frozen)
Method
- Chop carrots into small cubes.
- Heat the oil in a large skillet or large frying pan over medium heat. The large pan is crucial for getting the meat, added later, nice and brown.
- Add the diced onion to the pan.
- Sauté for 4-5 minutes or until the onion has softened and beginning to caramelise.
- Add the garlic and cook, stirring often for another 1 minute.
- Add the beef mince and cook, stirring often and breaking it up with a wooden spoon, until browned all over.
- Sprinkle the flour all over the top and mix well. Let it cook for another 2 minutes.
- Add the worcestershire sauce, beef stock, tomato paste and salt-reduced soy sauce. Stir well to combine. Bring it to a simmer and cook for 3-4 minutes until it thickens.
- Add the canned/frozen vegetables and simmer (not boil) a further 2-3 minutes until hot.
- Once the mixture has thickened enough, cool until steam is no longer rising from the mixture and spoon onto a slice of bread (we recommend 90g) and cover with another slice of bread to make a sandwich.
- Cover the top slice of bread sparsely with 7g of light tasty grated cheese (reduced fat).
- Wrap the sandwich in baking paper and place in a sandwich press until crunchy and the cheese is golden brown.
Recipe description
This toasty is inspired by the French croque monsieur Sandwich, that has crunchy cheese melted over the top. The recipe is loaded with peas, carrot, cauliflower, and onion to help kids reach their five serves of veggies a day so they can go out and play!
Variations
All canned and frozen ingredients can be substituted for fresh ingredients.
Mince filling can be frozen for storage for two months and can be used in other recipes.
