Ingredients

1.5cupsdates, pitted, chopped
1cup boiling water
1tspbaking soda
1/4cupextra virgin olive oil
2eggs
300gcanned pears, drained and chopped
1tspvanilla essence
3/4cupwholemeal self-raising flour
1/2cupplain flour

Method

  1. Pre-heat oven to 180°C and line a 12-hole muffin pan with muffin cases.
  2. Mix dates with boiling water and baking soda. Stir and let stand for 5 minutes.
  3. Combine oil, eggs, pear and vanilla in large bowl.
  4. Ad date mixture to egg mixture and stir through both flours until combined well.
  5. Pour batter into muffin cases and bake for 15-20 minutes or until a skewer comes out clean.
  6. Serve in the tuckshop as a snack.

Recipe description

These tasty muffins were created in collaboration with the Queensland Country Women’s Association’s (QCWA) Country Kitchens program. They’re made without any added sugar as the sweetness from the dates and pears provides a delicious caramel flavour.

Variations

If canned pears are unavailable, switch out for tinned apples or peaches.
