1kgchicken breast
2tsptumeric
3/4tspground cumin
3/4tspsalt
1/4tspblack pepper
1/2lemon
2tbspolive oil
2cupsbrown rice, uncooked
4cupsshredded lettuce or spinach
2cupsgolden tomatoes, sliced
1continental cucumber, sliced
1cupedamame beans
1avocado, thinly sliced
1cuphummus

Method

  1. Cut chicken breast into 2-3cm cubes then sprinkle chicken with tumeric, ground cumin, salt, and black pepper, and rub to coat.
  2. In a large, non-stick frying pan, heat oil over medium-high and cook chicken until cooked through.
  3. Allow to cool slightly and squeeze lemon juice over the cooked chicken.
  4. Meanwhile, cook the brown rice according to the packet instructions.
  5. Once slightly cooled, add 1/2 cup brown rice to a domed container.
  6. Arrange 95g of chicken, plus a handful of lettuce/spinach, golden tomatoes, sliced cucumber, edamame beans and several slices of avocado.
  7. Top with 2 tablespoons of hummus.
