Tuna Melt Wrap

Ingredients
1425g tin of tuna in spring water, drained
4heaped tablespoons of reduced-fat natural yoghurt
4tsps American mustard
1white onion, finely chopped
8heaped tablespoons of sweet corn
2cups of baby spinach leaves (optional)
Salt and pepper to taste
4wholemeal or multigrain wraps
8tablespoons reduced-fat cheddar cheese, grated
Method
- Mix the tuna with yoghurt, mustard, onion, sweet corn and seasonings.
- If adding the spinach, place it onto the centre of the wrap.
- Top with the tuna mix and sprinkle over the grated cheese.
- Fold into a square parcel by tucking the four sides over the mixture to close.
- Cook in an air fryer or oven for 6-8 minutes until golden brown and crunchy, or pan fry or toast in a sandwich press until lightly golden on both sides.

These yummy Tuna Melt Wraps were created in collaboration with the Queensland Country Women’s Association’s (QCWA) Country Kitchens program. Quick and easy to prepare, this delicious and filling warm lunch is perfect for the cooler months.
Variations
Tips
- If you don’t have an air fryer, you can easily toast your parcel in a sandwich press instead. You may need to reduce the cooking time depending on the sandwich press and keep an eye on your parcel to make sure it doesn’t burn!
- Prepare ahead of time and toast just before service.
