6largetorillas
1cupcorn kernels, canned, drained (no added salt) and rinsed
1 1/2cupsblack beans, canned, drained and rinsed, (no added salt)
1cupcapsicum, canned, drained and rinsed
100glight tasty cheese, shredded
2tspground cumin
1-2good pinchesgarlic powder
1sprinklepepper, black
1-2good pinchesonion powder
1-2good pinchespaprika

Method

  1. Combine filling ingredients in a bowl.
  2. Place tortilla on a flat surface and fill 1 half with the filling and fold over making a half circle shape. (Shape should now look like this - D).
  3. Place "D" shaped tortilla with filling into preheated sandwich press and grill until filling is hot, cheese is melted and tortilla is golden brown.
  4. Remove and rest for a minute before cutting so the cheese can reset a little. This helps to prevent the filling toppling out and sticking to packaging.
  5. Cut into quarters and serve 2 wedges per serve or as appropriate for your age group.

This Mexican inspired vegetarian quesadilla will make the kids cheer about how good this meal is. This tasty quesadilla is filled with nutritious beans, vegetables and melted cheese wrapped in a toasted tortilla.

Variations

Flat bread or wraps can be substituted (look for varieties with low salt). Can serve with a “dipping sauce”. We recommended mixing a tin of crushed tomatoes and a sprinkle of paprika and cumin together. Dispense 1/8 cup or 30mL into a dipping container. Dishing up into containers: 30 seconds per container. 6 minutes for 6 serves
