Catering for the Environment

It is estimated that between 20 and 30 per cent of climate change caused by human activity is attributable to our food and agricultural systems (The Office of Environmental Sustainability 2009). Current agricultural practices are affecting the availability of fresh water, degrading soil quality, threatening biodiversity and generating greenhouse emissions (Queensland Health 2009a).
