Cooking with Pantry and Freezer Staples

There may be times when your Tuckshop is on the receiving end of supply issues. This could be due to availability, transport, or circumstances beyond everyone’s control, such as weather. It is important to have a few recipes that you can whip up to keep the Tuckshop functioning where possible.

Easy recipes

Oven Fried Rice

Fried rice is one of the best dishes to make using pantry or frozen ingredients.

Adding frozen mixed veg adds great colour as well as additional nutrition. Leave out the ham to make this a vegetarian dish. Fried rice is still delicious if egg supply is an issue.

Use this recipe as a guide.

Vegetarian Quesadilla

These can be made in advance and lightly toasted, with a final toasting / warming occurring at serving.

Using avocado if cheese is not available offers an equivalent ‘creaminess’.

Spread avocado across the tortilla prior to loading with filling.

One-Pot Beans and Rice

This combination dish offers the advantage of providing protein and carbohydrates, and almost exclusively from your pantry shelf.

Canned carrots and mushrooms can be used if fresh are unable to be sourced.

Soups

Vegetables like pumpkin, potato, sweet potato, and onion have long shelf lives if stored correctly.

Consider making a hearty soup by adding available vegetables, canned tomato, salt reduced stock and some dried herbs and / or spices.
